This divine recipe is a wonderful, high fiber, health boosting, vegan substitute for the times when all you want is ice cream.
Yield: 2 pints
4 large very ripe avocados, pitted and removed from skins
1 ⅔ cup unsweetened cocoa powder
1 scant cup Grade A maple syrup
1 Tbs vanilla extract
½ tsp sea salt
½ tsp ground cardamom
¼ tsp ground cinnamon
Combine all ingredients in a blender or food processor.
Mix on low, scraping down the sides periodically, until well combined.
For some crunch enjoy with a topping of toasted coconut flakes or chopped roasted pistachios.
