Vegan Basil Pistachio Pesto

Pesto is one of my favorite go-to condiments. It's a great way to take advantage of fresh basil, easy to make, and goes with EVERYTHING. It is also loaded with antioxidants, helps balance blood sugar, boosts mental health and is anti-inflammatory. This is my all time favorite pesto recipe. I use pistachios instead of the traditional pine nuts, but you could easily substitute walnuts, almonds, or pecans according to your preference.



Ingredients:

2 C basil, washed & patted dry, leaves removed from stems

1/2 C olive oil

5 cloves garlic, peeled and minced

1 small lemon, juiced

2/3 C roasted pistachio nuts, coarsely chopped

1/2 tsp salt

Black pepper, to taste


Preparation:

Add all ingredients to a blender and blend until well combined. If you want a thinner pesto, add more oil and lemon juice. Adjust salt and pepper to taste. Enjoy!
